PREFACE Diet has a strong influence in the etiology of several diseases like, diabetes cardiovascular diseases ,cancer and obesity. Diet is also important for prevention of the lifestyle diseases and various researches have putforth the importance of dietary fibre in our daily diet. There is a paradigm shift taking place in the food cosumption pattern of the population moving towards more of processed and convienence foods and hence eating for pleasure and taste has to be replaced by eating for health. Dietary fibre is a very good adjunct to ameliorate diseases and hence dietary fibre information on cooked foods need to be understood by the common man so that he can include it judiciously in his daily diet and this book provides the dietary fibre and nutrient content of common forty South Indian breakfast, dinner and lunch items and their accompaniments. Along with this the standardised recipes are also included for the reference of the reader.
